Ingredients

  • 1 package of filo pastry sheets
  • 1 pound fresh spinach, chopped
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and black pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until softened.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool.
  4. In a large bowl, combine spinach mixture, crumbled feta, Parmesan, dill, parsley, salt, and pepper. Mix well.
  5. Brush a baking dish with olive oil. Layer filo sheets, brushing each layer with olive oil.
  6. Spread the spinach and cheese mixture evenly over the filo layers.
  7. Continue layering filo sheets on top of the filling, brushing each layer with olive oil.
  8. Fold in any overhanging filo edges to seal the pie.
  9. Bake in the preheated oven for 30-35 minutes, or until the filo is golden brown and crispy.
  10. Let the Spanakopita cool slightly before slicing into squares. Serve warm and enjoy!
