These empanadas are the perfect savory treat filled with a combination of ham, cheese, and hard-boiled eggs. They are great for a quick snack or to serve at parties. The flaky dough paired with the flavorful filling will surely be a hit with everyone!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 stick cold unsalted butter, cut into small pieces
  • 4-5 tablespoons ice water
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 4 hard-boiled eggs, chopped
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Directions

  1. In a large bowl, mix the flour and salt. Add the butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water and knead the dough until it comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the dough on a floured surface and cut out circles using a round cutter.
  5. In a bowl, combine the ham, cheese, hard-boiled eggs, parsley, salt, and pepper.
  6. Place a spoonful of the filling in the center of each dough circle. Fold the dough over and crimp the edges with a fork to seal.
  7. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  8. Bake for 20-25 minutes or until golden brown. Serve warm and enjoy!
