- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 1/4 teaspoon ground nutmeg
- 3/4 cup powdered sugar
- 1-2 tablespoons eggnog
- Red and green sprinkles for decorating
Directions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cornstarch, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Add egg yolk, vanilla extract, rum extract, and nutmeg to the butter mixture and mix until combined.
- Slowly add the dry ingredients to the wet ingredients and mix until a dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheet.
- Using your thumb, make an indentation in the center of each cookie.
- Bake for 10-12 minutes, or until edges are golden brown.
- Once cookies have cooled, mix together powdered sugar and eggnog to create a glaze.
- Fill each thumbprint with eggnog glaze and top with sprinkles.
