Fastelavnsboller, also known as Fastelavn buns, are delicious Danish pastries filled with whipped cream and jam. These sweet treats are traditionally enjoyed during the Carnival season in Denmark. The buns have a soft and buttery dough, with a sweet surprise in the middle. They are then topped with a generous amount of powdered sugar. This recipe is easy to follow and perfect for any occasion.

Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 package instant yeast
  • ¼ cup sugar
  • ½ teaspoon salt
  • ½ cup milk
  • 3 tablespoons butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • 4 tablespoons powdered sugar
  • ½ cup raspberry jam
  • 1 cup whipped cream
  • Additional powdered sugar for dusting

Directions

  1. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
  2. Heat the milk in a small saucepan until warm, then add it to the dry mixture.
  3. Add the softened butter, eggs, and vanilla extract to the bowl.
  4. Mix everything together until a soft dough forms.
  5. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  6. Place the dough in a greased bowl and cover it with a clean kitchen towel.
  7. Let the dough rise in a warm place for about 45 minutes, or until doubled in size.
  8. Punch down the dough and divide it into 12 equal pieces.
  9. Shape each piece of dough into a round bun.
  10. Place the buns on a baking sheet lined with parchment paper.
  11. Cover the buns with the kitchen towel and let them rise for another 15 minutes.
  12. Preheat the oven to 375°F (190°C).
  13. Bake the buns for 12-15 minutes, or until golden brown.
  14. Remove the buns from the oven and let them cool completely on a wire rack.
  15. Once the buns are cool, use a serrated knife to cut off the top of each bun.
  16. Set aside the tops and scoop out a small amount of the dough from the middle of each bun.
  17. Fill the hollowed-out part of each bun with a spoonful of raspberry jam.
  18. Whip the heavy cream until stiff peaks form.
  19. Fold in the powdered sugar.
  20. Spoon a dollop of whipped cream on top of the raspberry jam in each bun.
  21. Place the top of each bun back on, pressing lightly to secure it.
  22. Dust the buns with powdered sugar before serving.
