Ingredients

  • 1 pound ground chicken
  • 1/3 cup breadcrumbs

  • 1/4 cup vegetable oil
  • Buffalo sauce, for serving

Directions

  1. In a large bowl, combine the ground chicken, breadcrumbs, celery, onion, green onions, minced garlic, buffalo sauce, salt, black pepper, paprika, and dried oregano. Mix well until all the ingredients are evenly combined.
  2. Take a small portion of the chicken mixture, about 1 tablespoon, and flatten it in your palm. Place about 1/2 teaspoon of crumbled feta cheese in the center of the flattened portion. Fold the edges of the chicken mixture around the cheese, shaping it into a ball. Repeat with the remaining chicken mixture and feta cheese.
  3. Place the all-purpose flour in a shallow dish. Roll each stuffed chicken meatball in the flour, coating it evenly.
  4. In a large non-stick skillet, heat the vegetable oil over medium heat. Add the coated meatballs to the skillet and cook for about 8-10 minutes, turning occasionally, until they are golden brown and cooked through.
  5. Remove the meatballs from the skillet and drain them on a paper towel-lined plate to remove any excess oil.
