Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound chicken breast, cooked and shredded
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup enchilada sauce
- 1/4 cup chopped fresh cilantro
- 8 small corn tortillas
- Salt and pepper, to taste
Directions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened, about 5 minutes.
- Add the cooked and shredded chicken to the skillet. Season with salt and pepper to taste. Cook for another 5 minutes, until the chicken is heated through.
- Remove the skillet from heat and stir in the cottage cheese and shredded cheddar cheese. Mix well until the cheese is melted and combined with the chicken.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Warm the corn tortillas by heating them in a dry skillet or microwave for a few seconds, until they become pliable.
- Divide the chicken and cheese mixture evenly between the tortillas, rolling them tightly and placing them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas, making sure they are fully covered.
- Sprinkle the chopped cilantro over the top.
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, until the enchiladas are hot and bubbly.
- Serve the Cottage Cheese Chicken Enchiladas warm with extra cilantro and a side of sour cream, if desired. Enjoy!
