Ingredients
- 500g boneless chicken, cut into pieces
- 1 cup mixed vegetables (carrots, beans, bell peppers, etc.), diced
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup plain yogurt
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 tablespoon ginger-garlic paste
- 1 tablespoon curry powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
Directions
- Heat oil in a large pan over medium heat.
- Add cumin seeds, bay leaf, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
- Add chopped onions and cook until golden brown.
- Add ginger-garlic paste and sauté for another minute.
- Add the chicken pieces and cook until they are browned on all sides.
- Add tomato puree, curry powder, turmeric powder, red chili powder, and salt. Mix well and cook for 5 minutes.
- Add mixed vegetables and cook for another 5 minutes until they are slightly tender.
- Reduce the heat to low, and then add yogurt. Stir well to combine.
- Cover the pan and let the curry simmer for 15-20 minutes, or until the chicken is cooked through and the flavors are well-blended.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
- Serve hot with steamed rice or naan bread.
