  • Chopped fresh cilantro, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the cumin, coriander, turmeric, and cayenne pepper (if using). Stir for about 1 minute to toast the spices.
  3. Add the vegetable broth, diced sweet potatoes, and peanuts. Bring to a boil and then reduce heat to low. Cover and simmer for 20 minutes or until the sweet potatoes are tender.
  4. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  5. Return the soup to the pot (if using a regular blender). Stir in the diced tomatoes and peanut butter. Season with salt and pepper to taste.
  6. Simmer for an additional 10 minutes to allow the flavors to meld together.
