Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced

  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste

Directions

  1. In a mixing bowl, combine pineapple juice, soy sauce, minced garlic, grated ginger, brown sugar, ketchup, and rice vinegar. Whisk until the sugar is dissolved.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, ensuring it's fully coated. Reserve the remaining marinade for basting later.
  3. Marinate the chicken in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  4. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade.
