Ingredients

  • 4 pears, ripe but firm
  • 1 cup red wine
  • 1/4 cup granulated sugar
  • 1 cinnamon stick
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup finely chopped walnuts
  • 2 tablespoons powdered sugar
  • Mint leaves, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Peel the pears, leaving the stems intact. Cut a thin slice from the bottom of each pear so that they can stand upright.
  3. In a medium saucepan, combine the red wine, granulated sugar, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves.
  4. Place the pears in a baking dish and pour the wine mixture over them. Cover the dish with aluminum foil.
  5. Bake the pears in the preheated oven for 25-30 minutes, or until they are tender when pierced with a fork.
  6. While the pears are baking, prepare the walnut cream. In a mixing bowl, whip the heavy cream until soft peaks form.
  7. Fold in the finely chopped walnuts and powdered sugar, gently combining everything together.
  8. Remove the pears from the oven and let them cool slightly.
  9. To serve, place a baked pear on a dessert plate and drizzle it with some of the wine sauce from the baking dish.
  10. Top the pear with a dollop of walnut cream and garnish with a mint leaf.
  11. Repeat the process for the remaining pears.
