Ingredients
- 4 pears, ripe but firm
- 1 cup red wine
- 1/4 cup granulated sugar
- 1 cinnamon stick
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
- 1/4 cup finely chopped walnuts
- 2 tablespoons powdered sugar
- Mint leaves, for garnish
Directions
- Preheat the oven to 375°F (190°C).
- Peel the pears, leaving the stems intact. Cut a thin slice from the bottom of each pear so that they can stand upright.
- In a medium saucepan, combine the red wine, granulated sugar, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves.
- Place the pears in a baking dish and pour the wine mixture over them. Cover the dish with aluminum foil.
- Bake the pears in the preheated oven for 25-30 minutes, or until they are tender when pierced with a fork.
- While the pears are baking, prepare the walnut cream. In a mixing bowl, whip the heavy cream until soft peaks form.
- Fold in the finely chopped walnuts and powdered sugar, gently combining everything together.
- Remove the pears from the oven and let them cool slightly.
- To serve, place a baked pear on a dessert plate and drizzle it with some of the wine sauce from the baking dish.
- Top the pear with a dollop of walnut cream and garnish with a mint leaf.
- Repeat the process for the remaining pears.
- Serve the baked pears with wine and walnut cream immediately and enjoy!
