Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 24 miniature peanut butter cups, unwrapped

Directions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop or a spoon, drop tablespoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Using your thumb or the back of a teaspoon, make an indentation in the center of each cookie.
  8. Fill each indentation with about 1 teaspoon of creamy peanut butter.
  9. Bake in the preheated oven for 10 minutes.
  10. Remove the baking sheet from the oven and gently press a miniature peanut butter cup into the center of each cookie, making sure the peanut butter cup is slightly melted.
  11. Return the baking sheet to the oven and bake for an additional 2-3 minutes, until the cookies are set.
  12. Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely before serving.
