Ingredients

  • 1 pound fresh green beans, trimmed and halved
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup crispy fried onions

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes, until tender. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and mushrooms, and cook until the mushrooms have released their liquid and browned, about 8 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 2 minutes to cook out the raw flour taste.
  5. Slowly whisk in the chicken broth and cream until well combined. Bring to a simmer and cook for 5 minutes, until the sauce has thickened.
  6. Stir in the salt, black pepper, and shredded cheddar cheese until the cheese has melted and the sauce is smooth.
  7. Add the cooked green beans to the skillet and toss to coat them evenly with the sauce.
  8. Transfer the mixture to a greased 9x13-inch baking dish and sprinkle the crispy fried onions evenly over the top.
  9. Bake for 15-20 minutes, until the casserole is hot and bubbling.
  10. Remove from the oven and let cool for a few minutes before serving.
  11. Garnish with additional fried onions, if desired, and serve hot.
