Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots

  • Cream Cheese Frosting:
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add the vegetable oil and eggs to the dry ingredients. Mix until well combined.
  4. Stir in the grated carrots, crushed pineapple, chopped walnuts, raisins (if using), and vanilla extract.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
