- 2 cups popped popcorn
- 1/2 cup peanut butter
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1 tablespoon vegetable oil
- 1/4 cup crushed peanuts (optional)
Directions
- In a large bowl, combine the popped popcorn and peanut butter. Mix well until the popcorn is evenly coated.
- Add the powdered sugar and vanilla extract to the bowl. Stir until the mixture becomes thick and sticky.
- Using your hands, roll tablespoon-sized portions of the mixture into truffle shapes. Place the truffles on a baking sheet lined with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate chips and vegetable oil together in 30-second intervals, stirring after each interval, until smooth and melted.
- Dip each truffle into the melted chocolate, coating it completely. Use a fork to lift it out, allowing the excess chocolate to drip off. Place the coated truffles back onto the baking sheet.
