  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined. Fold in the grated carrots and chopped walnuts, if using.
  5. In another bowl, prepare the cheesecake filling by beating together the cream cheese, granulated sugar, vanilla extract, eggs, and sour cream until smooth and creamy.
