Ingredients
- 3 pounds boneless pork loin
- 2 tablespoons olive oil
- 2 apples, peeled, cored, and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 1 cup breadcrumbs
- 1/4 cup chicken broth
Directions
- Preheat the oven to 350°F (175°C).
- Butterfly the pork loin by making a lengthwise cut down the center, stopping 1/2 inch from the bottom. Open the pork loin like a book and flatten it with a meat mallet.
- In a skillet, heat olive oil over medium heat. Add diced apples, chopped onion, minced garlic, dried thyme, salt, black pepper, and ground cinnamon. Cook until the apples are soft and the onions are translucent, about 5 minutes. Remove from heat.
- Spread the apple filling evenly over the inside of the pork loin.
- In a small bowl, combine breadcrumbs and chicken broth until the mixture becomes slightly moist. Sprinkle the breadcrumb mixture over the apple filling.
- Starting from one end, tightly roll the pork loin, enclosing the apple filling.
- Place the stuffed pork loin on a greased baking dish. Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the pork loin from the oven and let it rest for 10 minutes before slicing.
- Slice the stuffed pork loin and serve hot. Enjoy!
