This spicy peanut chicken stir fry is a perfect combination of tender chicken, crunchy vegetables, and a savory peanut sauce with a kick of spice. It's a quick and easy dish to whip up for a satisfying weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into strips
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1/2 cup peanuts
  • Cooked rice, for serving

Directions

  1. In a large skillet or wok, heat 1 tbsp of vegetable oil over medium-high heat.
