These Walnut Raisin Scones are a delightful treat perfect for breakfast or afternoon tea. Made with a combination of crunchy walnuts, sweet raisins, and a buttery, flaky texture, these scones are sure to impress. They are quick and easy to make, requiring just a few simple ingredients. Enjoy them warm with a cup of tea or coffee for a cozy and comforting experience.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons coarse sugar (for garnish)

Directions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your hands, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the chopped walnuts and raisins.
  5. In a separate small bowl, whisk together the milk and vanilla extract.
  6. Make a well in the center of the dry ingredients and pour in the milk mixture. Gently stir until just combined, being careful not to overmix.
  7. Transfer the dough onto a lightly floured surface. Shape it into a circle and pat it down until it's about 1-inch thick.
  8. Using a sharp knife, cut the dough into 8 equal wedges.
  9. Place the scones onto the prepared baking sheet, leaving some space between them.
  10. Brush the tops of the scones with the beaten egg wash, then sprinkle with coarse sugar for a sweet crunch.
  11. Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on top.
  12. Remove from the oven and let cool on a wire rack for a few minutes before serving.
  13. Serve warm and enjoy!
