Ingredients

  • 1 cup cooked kasha
  • 1 can black beans, rinsed and drained
  • 1 cup grated zucchini
  • 1/2 cup grated carrots
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons Cajun seasoning
  • 1/4 cup bread crumbs
  • 1/4 cup all-purpose flour
  • Salt and pepper, to taste
  • 4 burger buns
  • Your favorite burger toppings (lettuce, tomato, onion, etc.)

Directions

  1. In a large bowl, mash the black beans using a fork or potato masher.
  2. Add the cooked kasha, grated zucchini, grated carrots, diced bell peppers, minced garlic, chopped parsley, Cajun seasoning, bread crumbs, and all-purpose flour. Mix well to combine.
  3. Season with salt and pepper to taste.
  4. Divide the mixture into 4 equal portions and shape each portion into a patty.
  5. Heat a grill or grill pan over medium heat. Brush with oil to prevent sticking.
