Ingredients
- 1 cup red quinoa
- 2 cups vegetable broth
- 1 bunch Tuscan kale, stems removed and chopped
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Directions
- In a medium saucepan, combine red quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until quinoa is cooked
- In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant
- Add Tuscan kale to the skillet and cook until wilted, about 5 minutes
