Ingredients

  • For the Dumplings:
  • - 1 cup cooked edamame beans
  • - 1/2 cup shiitake mushrooms, finely chopped
  • - 2 cloves garlic, minced
  • - 1 teaspoon fresh ginger, grated
  • - 2 green onions, finely chopped
  • - 1 tablespoon soy sauce
  • - 1 tablespoon sesame oil
  • - 1/2 teaspoon salt
  • - 1/4 teaspoon black pepper
  • - 20 dumpling wrappers
  • For the Dipping Sauce:
  • - 1/4 cup soy sauce
  • - 1 tablespoon rice vinegar
  • - 1 tablespoon sesame oil
  • - 1 teaspoon agave syrup
  • - 1/2 teaspoon chili garlic sauce
  • - 1 clove garlic, minced
  • - 1 green onion, finely chopped

Directions

  1. In a food processor, pulse the cooked edamame beans until coarsely chopped.
  2. In a large bowl, combine the chopped edamame, shiitake mushrooms, minced garlic, grated ginger, finely chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well.
  3. Place a dumpling wrapper on a clean surface. Spoon a tablespoon of the edamame filling onto the center of the wrapper. Lightly wet the edges of the wrapper with water.
  4. Fold the wrapper in half, enclosing the filling, and press the edges together to seal. Repeat with the remaining dumpling wrappers and filling.
  5. Heat a large skillet over medium heat and add a drizzle of oil. Place the dumplings in the skillet, ensuring they don't touch each other. Cook for 2-3 minutes, or until the bottoms are golden brown.
  6. Add 1/4 cup of water to the skillet, cover with a lid, and steam the dumplings for 4-5 minutes, or until the wrappers are cooked through and the filling is heated.
  7. While the dumplings are cooking, prepare the dipping sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, agave syrup, chili garlic sauce, minced garlic, and finely chopped green onion.
  8. Serve the cooked dumplings hot, alongside the dipping sauce. Enjoy!
