Ingredients
- For the Dumplings:
- - 1 cup cooked edamame beans
- - 1/2 cup shiitake mushrooms, finely chopped
- - 2 cloves garlic, minced
- - 1 teaspoon fresh ginger, grated
- - 2 green onions, finely chopped
- - 1 tablespoon soy sauce
- - 1 tablespoon sesame oil
- - 1/2 teaspoon salt
- - 1/4 teaspoon black pepper
- - 20 dumpling wrappers
- For the Dipping Sauce:
- - 1/4 cup soy sauce
- - 1 tablespoon rice vinegar
- - 1 tablespoon sesame oil
- - 1 teaspoon agave syrup
- - 1/2 teaspoon chili garlic sauce
- - 1 clove garlic, minced
- - 1 green onion, finely chopped
Directions
- In a food processor, pulse the cooked edamame beans until coarsely chopped.
- In a large bowl, combine the chopped edamame, shiitake mushrooms, minced garlic, grated ginger, finely chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well.
- Place a dumpling wrapper on a clean surface. Spoon a tablespoon of the edamame filling onto the center of the wrapper. Lightly wet the edges of the wrapper with water.
- Fold the wrapper in half, enclosing the filling, and press the edges together to seal. Repeat with the remaining dumpling wrappers and filling.
- Heat a large skillet over medium heat and add a drizzle of oil. Place the dumplings in the skillet, ensuring they don't touch each other. Cook for 2-3 minutes, or until the bottoms are golden brown.
- Add 1/4 cup of water to the skillet, cover with a lid, and steam the dumplings for 4-5 minutes, or until the wrappers are cooked through and the filling is heated.
- While the dumplings are cooking, prepare the dipping sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, agave syrup, chili garlic sauce, minced garlic, and finely chopped green onion.
- Serve the cooked dumplings hot, alongside the dipping sauce. Enjoy!
