Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (15.25-ounce) can corn, drained
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 package ranch dressing mix
- 1 package taco seasoning
- 4 cups chicken broth
- Salt and pepper, to taste
- Optional toppings: shredded cheese, tortilla chips, sour cream, chopped green onions
Directions
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
- Stir in the diced tomatoes, black beans, pinto beans, corn, diced tomatoes with green chilies, ranch dressing mix, taco seasoning, and chicken broth.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
