Ingredients
- 1 can black beans, drained and rinsed
- 1 can corn kernels, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 10 small corn tortillas
- 1 cup shredded Mexican blend cheese
- 1/4 cup chopped cilantro
Directions
- Preheat the oven to 375°F.
- In a large skillet, sauté the onions, garlic, and bell peppers until softened.
- Add the corn, black beans, cumin, chili powder, paprika, salt, and pepper. Cook for another 5 minutes.
- In a greased baking dish, layer the bottom with 5 tortillas, overlapping slightly.
- Spread half of the veggie mixture on top of the tortillas.
- Sprinkle half of the cheese on top of the veggie mixture.
- Repeat the layers with the remaining tortillas, veggie mixture, and cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
