Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 10 small corn tortillas
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup chopped cilantro

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, sauté the onions, garlic, and bell peppers until softened.
  3. Add the corn, black beans, cumin, chili powder, paprika, salt, and pepper. Cook for another 5 minutes.
  4. In a greased baking dish, layer the bottom with 5 tortillas, overlapping slightly.
  5. Spread half of the veggie mixture on top of the tortillas.
  6. Sprinkle half of the cheese on top of the veggie mixture.
  7. Repeat the layers with the remaining tortillas, veggie mixture, and cheese.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
  10. Garnish with chopped cilantro before serving.
