  • 2 cups all-purpose flour

  • 1/2 cup unsweetened almond milk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons chia seeds
  • 2 tablespoons icing sugar, for dusting

Directions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the cubed vegan butter to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
