Enjoy the classic holiday taste of eggnog without the added sugar with this easy and delicious sugar-free eggnog recipe. Made with natural sweeteners and a blend of cozy spices, this creamy and frothy drink is perfect for celebrating the holiday season. It's also suitable for those following a sugar-free or low-sugar diet. Serve it cold or warm, and garnish with a sprinkle of cinnamon for an extra festive touch.

Ingredients

  • 4 cups unsweetened almond milk
  • 4 large eggs
  • 1/4 cup erythritol or stevia
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional: 1/4 teaspoon ground cloves
  • Optional: 1/4 teaspoon ground allspice
  • Optional: Pinch of salt
  • Optional: 1/4 cup bourbon or rum (for a spiked version)
  • Optional: Whipped cream and cinnamon for garnish

Directions

  1. In a medium saucepan, heat the almond milk over low heat until warm (do not boil).
  2. In a separate bowl, whisk together the eggs and erythritol or stevia until well combined.
  3. Slowly pour approximately 1/4 cup of the warm almond milk into the egg mixture, whisking constantly to temper the eggs and prevent them from scrambling.
  4. Pour the tempered egg mixture back into the saucepan with the remaining almond milk, whisking constantly.
  5. Cook the mixture over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This should take about 5-7 minutes.
  6. Remove the saucepan from heat and stir in the vanilla extract, cinnamon, nutmeg, and any optional spices or salt.
  7. If desired, stir in the bourbon or rum for a spiked version.
  8. Let the mixture cool for a few minutes, then transfer it to a blender.
  9. Blend on high speed for 1-2 minutes until the eggnog becomes frothy and creamy.
  10. Pour the eggnog into a pitcher or individual glasses, and refrigerate for at least 2 hours to chill and allow the flavors to meld.
  11. Serve the sugar-free eggnog chilled, and garnish with a dollop of whipped cream and a sprinkle of cinnamon, if desired.
