Directions

  1. In a medium saucepan, heat the almond milk over low heat until warm (do not boil).
  2. In a separate bowl, whisk together the eggs and erythritol or stevia until well combined.
  3. Slowly pour approximately 1/4 cup of the warm almond milk into the egg mixture, whisking constantly to temper the eggs and prevent them from scrambling.
  4. Pour the tempered egg mixture back into the saucepan with the remaining almond milk, whisking constantly.
  5. Cook the mixture over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This should take about 5-7 minutes.
  6. Remove the saucepan from heat and stir in the vanilla extract, cinnamon, nutmeg, and any optional spices or salt.
  7. If desired, stir in the bourbon or rum for a spiked version.
  8. Let the mixture cool for a few minutes, then transfer it to a blender.
  9. Blend on high speed for 1-2 minutes until the eggnog becomes frothy and creamy.
  10. Pour the eggnog into a pitcher or individual glasses, and refrigerate for at least 2 hours to chill and allow the flavors to meld.
