Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 package chocolate candies in school colors (M&Ms work well)
  • 1 cup melted chocolate (can use dark or milk chocolate)
  • 1 package Reese's Peanut Butter Cups or small chocolate squares (for grad caps)
  • 1 tube of white icing

Directions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture and mix well.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  7. While the cookies are cooling, assemble the grad caps. Cut the Reese's Peanut Butter Cups in half. Place a small dollop of melted chocolate on the bottom of a Reese's Peanut Butter Cup half and press it onto the center of a chocolate cookie. Repeat with the remaining cookies.
  8. To make the tassel, take a small strand of white icing and attach it to the top of each grad cap cookie by pressing it into the melted chocolate.
  9. Lastly, decorate the cookies with the chocolate candies by placing them around the base of the grad cap.
  10. Allow the chocolate to set before serving. Enjoy these delicious grad cap cookies in celebration of your loved one's graduation!
