Ingredients

  • 4 ripe peaches
  • 1 tablespoon lemon juice
  • 2 tablespoons maple syrup
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup shredded coconut
  • 1/4 cup chopped pecans
  • 1/4 cup melted coconut oil
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the peaches and place them in a baking dish.
  3. Drizzle the lemon juice and 1 tablespoon of maple syrup over the peaches. Toss gently to coat.
  4. In a separate bowl, combine the almond flour, coconut flour, shredded coconut, chopped pecans, melted coconut oil, 2 tablespoons of maple syrup, cinnamon, nutmeg, and salt. Stir until well combined.
  5. Evenly spread the crumble mixture over the peaches in the baking dish.
  6. Bake for 25-30 minutes or until the topping is golden brown and the peaches are bubbly.
