Directions
- In a large pot, soak the dried kidney beans in water overnight. Drain and rinse the beans.
- In the same pot, heat a tablespoon of oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the diced onion, bell pepper, celery, and minced garlic. Sauté until the vegetables are softened.
