Ingredients
- 1 pound dried red kidney beans
- 1 pound smoked sausage, sliced
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups chicken broth
- Cooked rice, for serving
- Chopped green onions, for garnish
Directions
- In a large pot, soak the dried kidney beans in water overnight. Drain and rinse the beans.
- In the same pot, heat a tablespoon of oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the diced onion, bell pepper, celery, and minced garlic. Sauté until the vegetables are softened.
- Add the dried thyme, dried oregano, bay leaf, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Stir well to combine the spices with the vegetables.
- Return the sausage to the pot and add the soaked and drained kidney beans. Pour in the chicken broth and stir.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer the beans for about 2 hours, or until they are tender and creamy.
- Remove the bay leaf and discard. Taste and adjust the seasoning if needed.
- Serve the red beans and sausage over cooked rice. Garnish with chopped green onions.
