These North African Sweet Potato Burgers are a delicious and healthy alternative to traditional beef burgers. Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 small red onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for some heat)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 4 burger buns
  • Toppings: lettuce, tomato, red onion, avocado, and your favorite sauce

Directions

  1. Place the sweet potato cubes in a microwavable bowl and cover with a microwave-safe plate. Microwave on high for 5-7 minutes or until the sweet potatoes are tender. Alternatively, you can steam the sweet potatoes until tender.
  2. In a large mixing bowl, mash the cooked sweet potatoes and chickpeas together with a fork or potato masher. Leave some chunks for texture.
  3. Add the finely chopped red onion, minced garlic, ground cumin, ground coriander, smoked paprika, cayenne pepper (if using), breadcrumbs, chopped parsley, salt, and pepper to the sweet potato and chickpea mixture. Mix well to combine.
  4. Divide the mixture into 4 equal portions and shape each portion into a patty.
  5. Heat a grill pan or skillet over medium heat and lightly grease with cooking spray or oil. Cook the sweet potato burgers for 4-5 minutes on each side, or until browned and crispy.
