  • 2 pounds beef stew meat, cut into cubes
  • 2 tablespoons vegetable oil

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks
  • 1 cup diced potatoes
  • 1 cup diced tomatoes
  • 4 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chopped fresh cilantro, for garnish

Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and translucent.
  4. Add the sliced carrots, celery, red bell pepper, and green bell pepper. Cook for 5 minutes, stirring occasionally.
