Ingredients

  • 4 large baking potatoes
  • 6 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pat them dry.
  3. Prick the potatoes all over with a fork and place them directly on the oven rack.
  4. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  5. While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy.
  6. Once cooked, remove the bacon from the skillet and crumble it into small pieces.
  7. Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
  8. Cut each potato in half lengthwise, then scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
  9. Increase the oven temperature to 450°F (230°C).
  10. Place the hollowed-out potato skins on a baking sheet and brush them with olive oil on both sides.
  11. Season the skins with salt and pepper, then return them to the oven for about 10 minutes, or until they become crispy and golden brown.
  12. Remove the potato skins from the oven and sprinkle the shredded cheddar cheese and bacon crumbles evenly over each skin.
  13. Return the skins to the oven for another 2-3 minutes, or until the cheese has melted.
  14. Remove the potato skins from the oven and top them with sour cream and sliced green onions.
