Ingredients

  • 4 boneless pork chops
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 cups sliced mushrooms
  • 1 can cream of mushroom soup
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 4 potatoes, peeled and sliced
  • 1 cup frozen mixed vegetables
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Season the pork chops with salt and pepper, then sear them in the hot oil until browned on both sides. Remove the pork chops from the skillet and set aside.
  3. In the same skillet, add the sliced onions, minced garlic, and sliced mushrooms. Saute until the onions are translucent and the mushrooms are tender.
  4. In a mixing bowl, combine the cream of mushroom soup, chicken broth, and sour cream. Mix well.
  5. Place half of the sliced potatoes in the bottom of a greased casserole dish. Season with salt and pepper. Layer half of the sauteed onions, mushrooms, and frozen mixed vegetables on top of the potatoes.
  6. Place the seared pork chops on top of the vegetable layer. Pour half of the soup mixture over the pork chops.
  7. Repeat the layers with the remaining potatoes, onions, mushrooms, vegetables, and soup mixture.
  8. Cover the casserole dish with foil and bake in the preheated oven for 40 minutes.
  9. Remove the foil and sprinkle the shredded cheddar cheese on top of the casserole. Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  10. Serve hot and enjoy!
