Ingredients
- 12 lasagna noodles
- 1 pound ground beef

- 2 cans (14.5 ounces each) diced tomatoes

- 16 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 eggs, beaten
- 4 cups shredded mozzarella cheese
Directions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the ground beef and Italian sausage over medium heat until browned. Add the diced onion and garlic, and cook until the onion is softened.
- Drain any excess grease from the skillet. Stir in the crushed tomatoes, tomato paste, diced tomatoes, dried basil, dried oregano, dried thyme, salt, and black pepper. Simmer the sauce for 15 minutes, stirring occasionally.
- In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, chopped parsley, and beaten eggs.
- To assemble the lasagna, spread a thin layer of the meat sauce on the bottom of a 9x13 inch baking dish. Arrange 4 lasagna noodles on top of the sauce. Spread a third of the ricotta cheese mixture over the noodles, followed by a third of the remaining meat sauce. Sprinkle a cup of shredded mozzarella cheese over the sauce. Repeat these layers two more times, ending with a layer of meat sauce and mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and golden brown.
