Ingredients

  • 2 cups cooked rice (preferably day-old rice)
  • 1/2 pound shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Directions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble until cooked. Remove the scrambled eggs from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the diced onion and minced garlic until fragrant.
  4. Add the shrimp to the skillet and cook until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  5. Add another tablespoon of vegetable oil to the skillet and stir-fry the mixed vegetables until they are tender but still crisp.
  6. Push the vegetables to one side of the skillet and add the cooked rice to the other side. Gently break up any clumps of rice with a spatula and stir-fry for a few minutes.
  7. Add the cooked shrimp, scrambled eggs, soy sauce, oyster sauce, and sesame oil to the skillet. Mix everything together and stir-fry for another minute or two until heated through.
  8. Season with salt and pepper to taste. Serve hot and enjoy!
