Ingredients
- 2 cups cooked rice (preferably day-old rice)
- 1/2 pound shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Directions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the beaten eggs to the skillet and scramble until cooked. Remove the scrambled eggs from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil and sauté the diced onion and minced garlic until fragrant.
- Add the shrimp to the skillet and cook until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
