Ingredients

  • 1 pound ground chorizo
  • 4 large portobello mushroom caps
  • 4 burger buns
  • 4 slices of pepper jack cheese
  • 1 cup sliced red onions
  • 1 cup baby spinach
  • 4 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Olive oil for grilling

Directions

  1. Preheat your grill to medium heat.
  2. Gently remove the stem and gills from the mushroom caps.
  3. In a mixing bowl, combine the ground chorizo with salt and pepper. Divide the mixture into four equal portions and shape them into patties.
