Ingredients

  • 1 pound fresh salmon fillets
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 6 slices smoked salmon
  • Fresh dill sprigs for garnish

Directions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with non-stick spray.
  2. In a food processor, blend the fresh salmon fillets until smooth. This will be the base of your terrine.
  3. Transfer the salmon puree to a mixing bowl and add the lemon zest, lemon juice, fresh dill, parsley, chives, mayonnaise, sour cream, Dijon mustard, salt, and black pepper. Mix well until all the ingredients are fully incorporated.
  4. Line the greased loaf pan with the smoked salmon, making sure to slightly overlap the slices.
  5. Pour the salmon mixture into the lined loaf pan, smoothing it out with a spatula.
  6. Cover the pan tightly with aluminum foil and place it in a larger baking dish. Fill the outer dish with hot water, creating a water bath.
  7. Carefully place the baking dish in the preheated oven and bake for 45-50 minutes, or until the terrine is set and firm to the touch.
  8. Once cooked, remove the pan from the oven and let it cool for about 15 minutes.
  9. To unmold the terrine, run a knife along the edges of the pan to loosen it. Place a serving platter on top of the pan and quickly flip it over, tapping the bottom to release the terrine.
  10. Garnish the terrine with fresh dill sprigs and refrigerate for at least 1 hour before serving.
  11. Slice the salmon terrine and serve it chilled with crusty bread, a green salad, or your favorite sauce.
