Ingredients
- 1 whole chicken
- 1 lime, zest and juice
- 1 cup beer (preferably ale or lager)
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 tablespoon olive oil
Directions
- In a bowl, combine the lime zest, lime juice, beer, minced garlic, paprika, dried thyme, salt, black pepper, and cayenne pepper. Mix well.
- Place the whole chicken in a large resealable plastic bag. Pour the marinade over the chicken, ensuring it is well-coated. Close the bag and refrigerate for at least 1 hour, or overnight for the best flavor.
- Preheat your oven to 375°F (190°C).
- Remove the chicken from the marinade, reserving the marinade for basting later. Pat the chicken dry with paper towels.
- Heat the olive oil in a large oven-safe skillet or roasting pan over medium-high heat. Place the chicken in the skillet, breast-side down, and sear for 5 minutes or until browned.
- Carefully flip the chicken using tongs or oven mitts, so it is breast-side up. Pour the reserved marinade over the chicken.
- Transfer the skillet or roasting pan to the preheated oven and roast for 50-60 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when measured with a meat thermometer.
- While the chicken is roasting, baste it with the marinade every 15-20 minutes to keep it moist and flavorful.
- Once the chicken is cooked through and golden brown, remove it from the oven and let it rest for 10 minutes before carving.
- Serve the beer roasted lime chicken hot and enjoy!
