Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound pork loin, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup frozen peas and carrots
  • 3 cups cooked jasmine rice, chilled
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Directions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced pork loin and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and the minced garlic. Cook for 1 minute until fragrant.
  4. Add the diced onion and cook until softened and translucent.
  5. Add the frozen peas and carrots and cook until heated through.
  6. Push the vegetables to one side of the skillet and add the chilled jasmine rice to the other side.
  7. Pour the soy sauce and oyster sauce over the rice and toss to coat the rice and vegetables.
  8. Add the cooked pork back to the skillet and stir-fry everything together for 2-3 minutes, until the rice is heated through.
  9. Drizzle sesame oil over the fried rice and mix well.
  10. Season with salt and pepper to taste.
  11. Garnish with sliced green onions and serve hot.
