Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into thin strips
  • 2 bell peppers (any color), thinly sliced
  • 1 onion, thinly sliced

  • 2 tablespoons fajita seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika

  • 8 small flour tortillas

Directions

  1. In a large bowl, combine the fajita seasoning, cumin, chili powder, paprika, salt, and black pepper.
  2. Add the chicken strips to the bowl and toss to coat them evenly with the seasoning mixture. Let it marinate for 10 minutes.
  3. Heat olive oil in a large skillet or frying pan over medium-high heat.
  4. Add the sliced onions and minced garlic to the pan and sauté until the onions become translucent.
  5. Add the marinated chicken strips to the pan and cook until they are browned and cooked through, about 5-7 minutes.
  6. Push the chicken strips to one side of the pan and add the sliced bell peppers to the other side of the pan. Cook for an additional 5 minutes, or until the peppers are tender-crisp.
  7. Warm the flour tortillas in a separate skillet or microwave according to package instructions.
