Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large ripe bananas, mashed
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup fresh blueberries
  • ¼ cup water
  • ¼ cup granulated sugar
  • 1 tbsp cornstarch
  • ½ tsp lemon juice
  • Whipped cream and extra blueberries, for garnish

Directions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth and creamy.
  4. Add the mashed bananas and vanilla extract to the cream cheese mixture. Mix until well combined.
  5. Beat in the eggs, one at a time, until fully incorporated.
  6. Pour the cream cheese and banana filling into the prepared graham cracker crust.
  7. Bake for 25 minutes or until the edges are set and the center is slightly jiggly.
  8. Remove the pie from the oven and let it cool on a wire rack for 1 hour.
  9. Meanwhile, in a small saucepan, combine the blueberries, water, granulated sugar, cornstarch, and lemon juice.
  10. Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries release their juices.
  11. Remove from heat and let the blueberry topping cool to room temperature.
  12. Once both the pie and blueberry topping have cooled, pour the blueberry topping over the cream cheese filling in the pie dish.
  13. Refrigerate the pie for at least 4 hours or overnight to set.
