Potato panzarotti are a popular Italian street food, similar to calzones but smaller in size. This recipe adds a unique twist by using a savory potato filling. The crispy exterior pairs perfectly with the creamy and seasoned mashed potato center, making it a delicious and satisfying dish.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 package refrigerated pizza dough
  • Vegetable oil for frying

Directions

  1. Peel and boil the potatoes until tender. Drain and mash them in a bowl.
  2. Add Parmesan cheese, parsley, green onions, garlic powder, salt, and pepper to the mashed potatoes. Mix well.
  3. Roll out the pizza dough and cut it into circles using a cookie cutter or a small bowl.
  4. Place a spoonful of the potato mixture onto each dough circle, then fold them in half and seal the edges by pressing with a fork.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Fry the panzarotti in batches until golden brown and crispy, about 3-4 minutes per side.
