Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 can (14 oz) coconut milk
- 1 red bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup chicken broth
- Fresh basil leaves for garnish
- Cooked white rice for serving

- In a large pot, heat some oil over medium heat and sauté the onions, garlic, and ginger until fragrant.
- Add the chicken pieces and cook until browned on all sides.
