Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cold butter, diced
  • 1/4 cup cold water
  • 8 oz diced pancetta
  • 8 oz diced salami
  • 8 oz diced prosciutto
  • 8 oz diced provolone cheese
  • 8 oz diced mozzarella cheese
  • 6 eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. In a food processor, blend flour and cold butter until it resembles coarse crumbs.
  2. Slowly add cold water until dough comes together.
  3. Wrap dough in plastic wrap and refrigerate for 1 hour.
  4. Preheat oven to 375°F and grease a 9-inch pie dish.
  5. Roll out dough on a floured surface and line pie dish.
