Ingredients

  • 8 manicotti shells
  • 1 cup cooked and shredded chicken breast
  • 1 cup sliced mushrooms
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • Fresh basil leaves for garnish

Directions

  1. Cook the manicotti shells according to the package instructions. Drain and set aside.
  2. In a large skillet, heat some olive oil over medium heat. Add the sliced mushrooms and cook until they are tender and browned. Remove from the skillet and set aside.
  3. In the same skillet, add the cooked and shredded chicken breast. Season with Italian seasoning, garlic powder, salt, and black pepper. Cook until the chicken is heated through. Remove from the skillet and set aside.
  4. In a mixing bowl, combine the cooked chicken, mushrooms, ricotta cheese, half of the shredded mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Mix well.
  5. Preheat the oven to 375°F (190°C).
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Using a spoon or a piping bag, fill the cooked manicotti shells with the chicken and mushroom mixture. Arrange them in the baking dish.
  8. Pour the remaining marinara sauce over the filled manicotti shells, making sure they are fully covered.
  9. Sprinkle the remaining shredded mozzarella cheese on top of the sauce.
  10. Cover the baking dish with foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
