Ingredients

  • 2 lbs fresh asparagus
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. Trim the tough ends off the asparagus spears and cut them into 1-inch pieces.
  2. In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until softened.
  3. Add the asparagus pieces to the pot and stir to combine. Cook for a few minutes until the asparagus starts to soften.
