Ingredients
- 2 cups pinto beans
- 6 cups water
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
Directions
- Rinse the pinto beans under cold water, picking out any debris or damaged beans.
- In a large pot, add the rinsed beans and water. Bring to a boil over high heat.
- Reduce the heat to low and simmer the beans for 2 hours or until they are tender.
- In a separate pan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic. Saute until the onion becomes translucent and the garlic is fragrant.
- Using a slotted spoon, transfer the cooked beans to the pan with the onion and garlic. Reserve the cooking liquid.
