Ingredients

  • 2 cups pinto beans
  • 6 cups water
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice

Directions

  1. Rinse the pinto beans under cold water, picking out any debris or damaged beans.
  2. In a large pot, add the rinsed beans and water. Bring to a boil over high heat.
  3. Reduce the heat to low and simmer the beans for 2 hours or until they are tender.
  4. In a separate pan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic. Saute until the onion becomes translucent and the garlic is fragrant.
  5. Using a slotted spoon, transfer the cooked beans to the pan with the onion and garlic. Reserve the cooking liquid.
  6. Add the ground cumin, chili powder, salt, and black pepper to the pan. Mix well to combine all the ingredients.
  7. Using a potato masher or the back of a fork, mash the beans until they reach your desired consistency. For smoother refried beans, add some of the reserved cooking liquid and continue mashing.
  8. Simmer the mashed beans for 10 minutes, stirring occasionally. If the beans become too dry, add more of the reserved cooking liquid.
  9. Remove the pan from heat and stir in the chopped cilantro and lime juice.
  10. Serve hot as a side dish or as a filling for tacos, burritos, or enchiladas.
