Ingredients
- 4 cups chicken broth
- 1 cup beer (preferably a light lager)
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder

- 1/4 teaspoon paprika
- Salt and black pepper to taste
- Chopped chives or green onions for garnish

- Gradually whisk in the roux into the broth-beer mixture, making sure there are no lumps.
- Stir in the milk and heavy cream. Continue simmering for about 10 minutes, stirring occasionally.
- Reduce the heat to low and gradually add the shredded cheddar cheese, whisking until melted and smooth.
- Add the Dijon mustard, garlic powder, onion powder, paprika, salt, and black pepper. Stir well to combine.
- Continue cooking the soup for another 5-10 minutes, allowing the flavors to meld together.
- Serve the soup hot, garnished with chopped chives or green onions.
