Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cans diced tomatoes

  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup heavy cream (optional)
