- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
Directions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar with an electric mixer until light and fluffy, about 3 minutes.
- Add the egg and vanilla extract and beat until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared baking sheets. Flatten each ball slightly with your hand.
- Bake for 10 to 12 minutes, or until the edges are lightly golden. The cookies will still be soft to the touch.
- Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
