Ingredients

  • 2 cups rye flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sea salt
  • 2 tablespoons caraway seeds
  • 2 tablespoons brown sugar
  • 1 1/2 cups water

Directions

  1. In a bowl, mix together the rye flour, instant yeast, sea salt, caraway seeds, and brown sugar.
  2. Add the water and mix until a dough forms.
  3. Turn the dough onto a lightly floured counter and knead for 5 minutes.
  4. Cover the dough with a kitchen towel and set aside to rise for 1 hour.
  5. Preheat the oven to 375°F (190°C).
  6. Line a baking sheet with parchment paper.
  7. Divide the dough into two equal-sized balls.
  8. Shape each ball into a loaf and place on the prepared baking sheet.
  9. Bake for 40 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  10. Remove from the oven and allow to cool completely before slicing.
